When Epernay Lounge‘s interior designer, David Schaich, decided to fuse the restaurant’s backdrop design with the aesthetic elements of France’s Champagne culture together with some of Asia and the flowing shapes of the sea, he laid the foundation for the creation of a space with an unmatched allure.  Indeed, with Denver’s beloved Chef Duy Pham at the helm of Epernay’s gastronomic operations, Epernay’s culinary creations capitalized upon this theatrical backdrop, creating dishes with as much allure as the décor itself.

In the end, both the cuisine and the décor of Epernay Lounge put on a sexy, inventive, and ultimately provocative show that will have you buzzing about Epernay for days after.  Using Japanese techniques to create contemporary American flavor, Chef Duy Pham creates the classic Asian dishes in a way that combines flavors from all over the world that have arrived to America and are now an intrinsic part of the melting pot of American cuisine.  This cuisine is healthy and sleek, made according to the French sous vide method of cooking that involves no frying or grilling.

The menu is always changing to reflect the freshest catch and the chef’s artistic inspiration of the moment.  In Chef Duy Pham’s kitchen, a fresh tail of lobster might serve as the canvas for a painted dish composed of shaved fennel, mango, radish, pea shoots, and pea tendrils, all touched upon with the enveloping flavor of vanilla.

When that bittersweet ending does come, and the curtains are all prepared to fall, you can end it all with panache by sliding your fork into a bittersweet chocolate cheesecake, a sexy ending to a provocative meal.

Groovy, psychedelic wallpaper, organic bamboo stalk partitions, and an iron red forty foot granite bar set the stage for an encore presentation that includes dancing on Epernay’s very own dance floor through the night.  From the dance floor to the dinner tables, Epernay’s offers an entertaining experience for gastronomers and clubbers alike.
