A Laid-Back, yet Elegant Denver Foodie Haven


Tucked away on a corner in the Jefferson Park neighborhood is an unassuming foodie haven, where foodies in the know-how gather each week to enjoy the newest creations of Executive Chef Matt Selby. If you are well-read in the Denver culinary happenings, you may recall Chef Matt Selby from the Vesta Dipping Grill. Now, however, Chef Selby has strayed far from his days of cooking up giant slabs of meat, signatures to Vesta, and is now finally free to create food with his own twist, the way he might cook for people in his own home.

Selby’s style is laid-back, yet elegant, which clearly comes through in dishes such as the “Ham & Cheese” made with authentic Italian prosciutto, French camembert, Spanish queso de mano, an unexpected handful of pistachios, and a few leaves of the herb mallow. With one dish, Selby proves that simple ham and cheese can be the best dish you have had this month. The name of the dish never truly portrays the delicious masterpiece Selby has created. Nothing comes out as you would expect.

“Seared Foie Gras” is another one of Selby’s works of art, made with pumpkin bread pudding, sage, and a charred fig rum reduction, a description that might interest you even if the words “foie gras” are not in your normal culinary vocabulary. For those who love some good seafood, the “Manilla Clams” bring together flavors that will have you licking your fingers. Tucked in a prosciutto broth with chive aioli, roasted fennel, and asparagus, the clams take on new flavors with every bite.

All of these creative and elegant dishes are served in an unpretentious manner, reflecting an atmosphere that is just as laid-back and warm as Chef Selby himself. In the end, Chef Selby and his team have created a sort of home away from home for any foodie who enjoys a restaurant with a genuine neighborhood feel coupled with food that will knock your socks off. Just remember to put them back on before you leave this little foodie haven.
