ROADTRIP! Who wants to go? That is exactly what friends Wheaton Augur and Troy Selby of 520 Grill did just over two years ago. Wheaton’s parents threw them a couple of hundred dollars so the two boys could explore different diners and roadside establishments. And that’s exactly what they did finding their food epiphany along the way that paved the way for 520 Grill.
They loaded their dogs into the car and headed down south and visited as many roadside stops and diners as they could find. One place of significant influence was Kip’s Grill in Crede, CO, they loved the basic Baja style restaurant and the food Kip served.
They wanted to bring together a menu that everyone could eat, keeping in mind Aspen’s local’s and tourists alike who play hard, eat healthy and play harder again. Conscious of vegetarians, gluten and dietary restrictions, they cook their vegetables on a corrugated flat top first thing in the morning so they don’t come into contact with the meat. And speaking of meat, truly one of the best burgers you will have, they even have daily burger specials. Not only did the road trip influence them, their experience as classically trained chefs and working in different parts of the country also gave a great deal of education to draw from.
When you go into 520 Grill you can see the influence the road trip had on them, their logo is reminiscent of a CO highway sign, their menu pays homage to many of the roadside eateries they visited and you can tell these two friends love what they do.
